是英文GoodManufacturing Practice的缩写,中文的意思是“良好生产操作规范”,是一种特别注重在生产过程实施对食品卫生安全的管理。简要的说,GMP要求食品生产企业应具备良好的生产设备,合理的生产过程,完善的质量管理和严格的检测系统,确保最终产品的质量(包括食品安全卫生)符合法规要求。GMP所规定的内容,是食品加工企业必须达到的最基本的条件。
